Doing a dinner soon for about 200 people for the Governor of Tennessee and some very nice guests.

I am trying to figure out a decent starch food to add to the menu. Already using a locally made grits for a grits and greens casserole, baked beans, and slaw that I used for this event last year. Also, doing shrimp and smoked Gouda cheesy grits, ribs, chicken, pork, brisket and a roasted poblano sausage. Banana pudding, pound cake with strawberries, lemon ice box tarts and a bourbon brownie will be on a dessert table.

This group has no problem putting the groceries away and I want a homemade side to add for a dinner. I think we have a very good potato salad but potato salad to me isnít a dinner item.

These guys like having the variety of foods I put out because they can try a little of everything.

Thanks for any ideas!
