If you make anything from fresh potatoes my reccomendation would be Klondike brand from Green Giant. Slightly pricier than other brands of spuds but quality is so much better it's worth it. Never musty smelling/tasting and hands down the sweetest retail potato on the shelf, never buy anything else now, inparticular the Klondike Rose (red potatoes) AWESOME.
Also you could try a BBQ style risotto. Lends better to longer holding times better that other rice dishes.
