Been thinking about this one...
How about stuffed potato shells...
With seafood chunks, clams (steamed in white wine), oysters(deep fried), sweet potato fluffy stuff, drizzled with maple sauce and the ultimate of bourbon bread pudding on the end. Serve it at the end of the meal. Finish, top it of and decorate it. I'm good with that one.
Big potato skins to start with...6-7 inch, then layer on the previous ingredients...killer finish for the group you have.
