i really love salmon. i usually just soak it overnight in fish brine, rinse, and then rub on brown sugar and pure maple syrup. it makes a good paste. butter is always good too. just use light(cherry, apple, pecan) smoke on it till its done(splits with a fork). mist while cooking with apple juice. turns out great everytime.
ps-i've been playing around with fish jerky lately too. i've been using a dehydrator(low heat). think i'll attach a smoke pistol to it. marinated in tiger sauce, rubbed with smokin guns hot, and dried out. striped bass is amazingly good. haven't tried any others yet.
