Smoked garlic bruscetta(sp?). Slice the top off a head of garlic and drizzle with olive oil some salt and pepper. Wrap in foil leaving the top exposed and smoke until very soft. Mash with a little more olive oil to make a spread and put on toasted bread slices. Top with chopped olive and tomato. Maybe some cheese but it may cover the garlic.
