Yesterday I got to thinking about braunschweiger/liverwurst from some I had a few days ago. Thought, "why haven't I tried making that yet"? Soooo, got 25# in 2# tubes in the smoker right now. Did a couple test batches....tastes awesome so far. Mix is equal parts, ground chicken, ground and pureed liver (mix of turkey, beef and chicken) and ground pork.
