I asked the question on another forum and an internet friend answered, below.

I'm not sure about the amaretti cookies, but she's Italian, so she's used to such a topping.

I bet this would be a winner!



Make a roasted garlic cheesecake. Use an herb foccacia, dried and crumbed for the crust. Then, blend the roasted garlic into a conventional cheesecake recipe, omitting the sugar. Top it with some crushed amaretti cookies and serve as an appetizer
