offer your services at a restaurant, BBQ or not, for little or nothing for a few months and see how it fits. Tell them that your are exploring opening your own, and do it in an area where you won't be a competitor. Then you can see how you'll like it and what it involves, that is if you haven't already. I was raised in the restaurant business....it's not just ringing the til, hard ass work!
