with no chains to compete against you can set good prices. when the individual goes up against the sonnys of the world you are stuck with their basic price structure. just run an anticipated cost of doing business and figure out how much pork, brisket, ribs and chicken you have to sell to make before you jump in. not a lot of profit in brisket and ribs; little better in pork, not going to sell a bunch of chicken.
