So I am kinda new to the smoking game. I see alot of smokers with a "reverse flow" where the heat and smoke go under the food, up and back across coming out on the same end as the firebox. I have also seen alot of smokers where the heat simply goes from the firebox into the cooking chamber and out the stack on the other end. So my question is, which to you prefer, use, and why? I am building my first BIG smoker and havent decided which way to go. Thanks!
