I've got a 5.2 pound brisket. Wish it was bigger but I'm smokin' what I got to work with. The smoker I'm using is a smaller, Charbroil with the side smoker compartment attachment. It is windy (10-15mph), and around 65F here in central Texas. Even with all the vents shut (not a very tight smoker), I'm at 280F, which is over the recommendations I've read. Just wondering what time length y'all would say I need for best results, and any other tips you might have. Smoking with only slightly aged pecan
