Forgot to mention this is a thin, wide cut of brisket, thinnest brisket I've ever seen. Young cow, and grass-fed only.
Ok, wind died down and I'm smoking at 255-245F for about an hour now. Currently at 245. Put the brisket on at 12:45. Been on 1/2 hour.
Anybody wanna take a guess what time I can take this off and put it on the table?
