hello all....i am catering a royals/cards game later this year and am just trying to figure some numbers. I've tried the catering worksheets and i'm just getting more and more confused! Anyway, serving 100 people before and after the game. My menu consists of pulled pork, spare ribs, brisket(optional), cheesey corn and baked beans...they will also be bringing brats for me to cook. the majority of the meat will be pulled pork. i dont think every person will eat every meat, so i'd rather not smoke 30+ racks of ribs...but if any of you could throw in your 2 cents, i sure would appreciate any help.
