I would drop the brisket and add chicken, it is easy to cook and it cooks fast so you can see how things are going and add more chicken as you go. Brisket is too expensive and you don't have flexability. Any leftover chicken from the first eat can be pulled for pulled chicken sandwiches for the second eat. I also don't think you will get 100 after the game. The rest sounds great.
