Fred, here is an excellent white bean recipe from Pot on the Fire by John Thorne.
1/2 pound dried white beans soaked for 8-12 hours covered amply in spring water (washed and picked over)
1/4 cup EVOO
2 cloves finely minced garlic
3-4 sage leaves
1/2 tsp black pep
1/2 tsp ground hot red pep
1/2 tsp salt
Preheat oven (or the pit) to 200 degrees.
Drain beans and reserve cooking liquid.
Put beans and everything else but the reserved liquid into a pot and stir gently.
Heat bean soaking liquid to boiling and add enough to cover the beans.
Cover the pot and cook in the oven or pit 4-5 hours.
Check water level every so often and add remaining (hot) bean liquid or boiling water as necessary to keep beans covered.
You can add a couple ounces of ham to the rest of the ingredients at the beginning. You can also add cooked greens at the end.
This recipe makes delicious, tender white beans that are not falling apart. You can double the recipe easily. There are faster ways to cook them but this is the best I have found.
