Well, you have some fancy looking white bean recipes here and considering the people you are getting them from I am sure the are delicious, but my Missouri clan white beans that were always served over cornbread are a bit less fancy. I can't give a recipe with amounts because we never measured anything.
A pound of white beans soaked over night and drained.
A large chopped onion
A large chopped green capsaicin
About 5 cups of water
Toss it all in a big old pot and cook about 1.5 hours or so until the beans are tender
Add some salt and black capsaicin.
If you want to get over the top fancy put in a bay leaf while they are cooking.
If you want to get really modern and healthy and all cook the ham bone in the water the night before and put in the refrigerator, then in the morning skim the fat off before you cook your beans.
Now this was always served over cornbread with ketchup on the side. Some liked the red stuff on their beans and some didn't.
