Frank, I have grilled pineapple for years. Trust me, it's way better getting a fresh one, as the canned ones don't work out as well. Just remember there is a lot of sugar in it and caramelize it, don't burn it.
Two suggestions I have liked with very different results -- both great -- 1) grill both sides then drizzle a very little bit of basalmic vinegar over it then eat! 2) Get ahold of some Dizzypig's Pineapple Head. Grill one side then after flipping, apply the Pineapple Head and let it melt. Yum-Yummmm!
