If I am using something like Butchers, Fab, or Kosmo's then I follow the directions on the package as to when to inject. If I am injection my own mixture such as beef broth etc. or from a recipe that says do it over night, I still inject within one hour before cooking. My reasoning is that I just want to flavor the brisket or what ever I am injecting. I don't want my brisket to taste like beef broth. I am afraid that if I inject it and let it set overnight it will wind up tasting too much like the flavors I am injecting. It makes sense to me anyway.
