That price is not outrageous for a sandwich with 1/2 lb of meat on it. Have you considered a more mainstream 5-6 oz sandwich to keep price under double-digits? I mean 8 oz is a mammoth sandwich (anyone who doubts, weigh out 8 oz of sliced brisket on a scale and make a sandwich; it's more meat than you may think). As well, if you are able to keep food costs in the 25-30% range in today's restaurant economy, you are a God. 33% used to be the ideal, but transport and inflation are making most kitchens consider 35-36% a new working model. The bottom line though, is what the market will bear, and really, that is your true barometer. What do YOU think?
