Last night I had some brisket for dinner and my wife made some french fries to go along with the brisket. She made the fries out of Japanese sweet potatoes she picked up at the market and they were great. They were hand sliced like regular thin fries and cooked in the skillet with olive oil and "I can't believe its not butter." They turned out to be a golden yellow color, slightly sweet and a great tasted. I ate way too many of the fries. I almost forgot I sprinkled everything with a little Fleur de Sel French Sea Salt, the best tasting salt in the world.

I you ever see these sweet potatoes in the store buy some they taste really good and are good for you. I looked them up on the internet and they are called Satsuma Imo. Satsuma is the area they come from and Imo means sweet potatoes. You find these sweet potatoes cooked in tempura. Anyway, something different to try if you get a chance.
