They came out GREAT! imho... Butcher injection with apple juice the night before and Dixie Pig Course Rub. More Rub in the morning. I started with two 10# butts (I have the butcher cut them in half, long ways). Put them on at 8:30 AM and the WSM held steady at 230* - 250* all day in a steady rain, breezy and 60*.... Used Cowboy lump and hickory chunks... Had to add some more fuel around 3 PM. That lump sure burns fast. Thermometer alarm went off at 200* at 5:15PM. Let them set for a couple of hours before pulling them very easily. Made the chili yesterday afternoon to serve this evening at a charity fund raiser this evening.. Going to mix up a batch of my BBQ slaw this afternoon to go with the chili.
