Apricot wood is supposed to be good for smoking pork and chicken and has a mild sweet flavor. Bark on or bark off, have tired both and I can't really tell the difference. But if it's easy to strip the bark off then I do it. I have heard that Oak and Pecan wood with the bark on is bitter but the fruit woods are OK. Like I said I strip it off if it's easy to do but otherwise it stays on.
