I grew up at the foot of Lookout Mountain in North Georgia. Hickory was what you had to cook with. They would have rolled on you if you had said peach back then. Today not far from from where I grew up there is a pellet plant. Times change. We all have our own ways that we cook. Myron will tell you he developed the hot cook method so he could get some sleep. Works good for him. I have tried it and still low and slow works best for me. Look at what stick burners have developed into,fine turned cooking machines. I have a lot of respect for what Myron,Mike, Johnny, Rod, and the list could go own,have done for our sport. I'm glad that some make a good living from it. But we all still have a chance to have the Best BBQ on any given weekend and be *1. As you said there ain't no right way but we sure have had fun doing it our way.
