I always air dry mine for a couple of hours before I smoke it too. Never done it in our FEC yet, but I have a Cabela's gas vertical that I've done it on many times. I run one end of the jerky through those bamboo skewers and then hang it down from the racks. It also allows you to pull off individual pieces as they are done. Should bend and kind of splinter, but not break. I also use shears to cut it up into a bunch of about 1-1/2" pieces and then package it that way. Good luck!
