depends upon how far ahead. cook to med rare; cool; to freezer. take out, zap for 1 minute in microwave; to electric flat top with worchestershire and your favorite beef/steak seasoning/rub. still very moist and tasty. would love to cook to order but not the demand. all bbq related plates get to table within 5 minutes from order being placed. that includes 3 minutes for fresh french fries and toasting the buns.
