Best way to reheat ribs and chicken?

Ive been asked to cook for a small function in a couple of weeks. Problem is, is that I am very short on time that day. Is there a foolproof way to precook 20 racks of ribs, and 40 chicken quarters, and then just reheat them onsite that day? What are the best ways to do this? Will they be just as good, or at least very close?
