Buy this book, "Wicked Good Barbecue". I tried the brisket and it was the best brisket I've cooked yet by far (the bane of my BBQ existence)! It was so good that I'll probably do a version of this in my first KCBS comp this summer (cooked in a few non-sanctioned comps last year and this year). I also did their pork butt and it turned out very good too. Haven't tried the chicken yet, but that's because I'll probably stick to my version of Jumping Jim's chicken that's done well for me (Google that recipe. Posted everywhere).
