Just where I was going. Any of the woods used for smoking range from mild to strong and all are good. ANY of them if too green or over used/heavy will be bitter and acrid as most of us know. I would rather have NO smoke than too much. As far as sweetness being imparted as some claim....eh. As an accoutrement to your smoking, i.e. using charcoal or gas/electric for your main heat source, go for the stronger woods. If using the wood as your main heat/fuel source go for the milder ones or if using milder or stronger meats adjust accordingly. My personal favorites, hickory would be #1 followed by apple, maple and cherry. Maple and hickory are 2 of my favorites on homemade bacon.
