I made this silly little youtube video a year or so back on making bacon. It has over twenty thousand hits now. I started making bacon to give out at Christmas time to clients and neighbors, but now the demand is year round.
I don't trim the skin anymore until after I slice it on a commercial style slicer. Some people want it left on for a crisper crunch. I save all the trimmings and chunks for beans,salads,and anything you would use bacon in.
Home Made Bacon:
2 CUPS KOSHER SALT
1 CUP DARK BROWN SUGAR
1 CUP WHITE SUGAR
1/3 CUP BLACK PEPPER CRACKED COARSE
1 ½ TSP HICKORY SALT
1 ½ TSP CELERY SALT
3 TSP PAPARIKA
3 TSP PORK SAUSAGE SEASONING
2 TSP BREAKFAST BLEND COFFEE FINE GRIND
