Hello, I am not a caterer but I can cook for 40 people. How about stuffed boneless chicken breasts? Cut them almost in half, stuff with thin, and I mean thin, slices of good quality ham and a mild cheese, and kind of roll the thin side of the breasts under so they look nice for the presentation before you cook them and so they cook evenly. Cook in pans at oven temp. Should not take long and use very little smoke if any. Glaze with sauce mixed with honey at the end. Wow factor is the quality of the ingredients and not overcooking them and the sides. Give it a trial run in the oven to see. M.A.
