from one vol fan to another. the starting point to answer this question is how much meat do you want them to have. say you want 8 oz per person that would mean you would have to net 80 lbs after cooking for 160 people. give youself 50% waste. so you would start with 160 lbs of pork or 20 8# butts. if you want each to get 6 oz each then 6 oz X 160 people equals 960 total ozs or 60 lbs X 2 (50% waste) for a total of 120 lbs or 15 8 lb butts. most packing companies pack 10 butts per case so you need at least an 80# case. if you are ordering "by the case" you need to specify "minimum 80#" or they will just send you what they have. hope it helps.
