Does Heat Source Matter With Short Cooks?

A post below got me thinking. When I cook a steak or burgers for my family, will the heat source make that big of a difference. I do my burgers on the BGE and they are on for 15 minutes or so. Would cherry or oak really make a big difference over lump or briquets or, shudder, gas? Same with steaks.

Just curious and appreciate any answers.
