i'm going to be on a radio show within the hour, and they wanted a wild turkey recipe. what are your thoughts on this one? thanks
Wild Turkey Pastrami-
Start with four boneless, skinless wild turkey breasts
Mix 1 cup of Todds sugar cure with 1 gallon of hot water and dissolve
Inject breasts with cure solution, every inch or so.
Make a dry rub from the following-
¼ cup mortens tender quick
2 tblesp brown sugar
2 tblesp black pepper
2 tblesp dried parsly
1 tblesp dehydrated onion
2 tblesp sea salt
½ tsp ground cloves
3 tblesp pickling spices
8 cloves minced garlic
Mix all ingredients well and rub into meat, covering all surfaces
Place the meat in sealed bags, and squeeze out the air. Place the meat in the refrigerator, in a non reactive pan, for 3 days. Flip bags over daily.
On smoking day, remove meat from bags, rinse off the rub, and soak in fresh water for 1 hour. Pat the meat dry, and place on racks to air dry.
Mix 3 parts ground black pepper, 1 part ground coriander seed, and 1 part brown sugar. Rub this mixture heavily on the meat, so that a crust will form when smoked.
Smoke with lump charcoal and light cherry wood, until the meat hits 155 internal temperature, misting with apple juice while cooking. Cool and slice thin, across the breast.
