Have your fire on a grate also so the ash can drop underneath. Will provide better airflow too. Before putting the food on, rake the coals so ash falls thru the bottom, nice clean coals then start food. Rake, poke coals or use a hook to slightly lift and shake grate between loading grill with food as needed. Makes for a much cleaner burning fire when burning on a grate.
