I just checked my home made reverse flow. I would recomend 6 inches minimum and would suggest 8 or 9 inches between racks. Lots of things come into play. Does you bottom rack slide out so you can service the items cooking there? What are you cooking? With your Lang, I am guessing you have been enjoying the benifits of radiant heat off of the reverse plate. (I never actually been close enough to stick my head in one) The top rack will cook a little different than the bottom rack. My cooker has a hot bottom rack, a little cooler middle rack and the top rack is as warm as the bottom.
