I just checked my home made reverse flow and I would recommend a minumum of 6 inches and would suggest 8 or 9 inches. Your cooker will be different with a second rack. I am guessing that you have been enjoying the benifits of the radiant heat off of the reverse plate. (I haven't been close enough to a Lang actually look inside) The top rack won't have as much radiant heat, but it might cook just fine if your cooker runs a little hotter in the top of the cook chamber.
