Is your wood dry or green? If it's dry and you store it in a tub it won't mold, but green wood may get funky. Assuming your wood is green, when you chunk it, it'll dry faster. When it's dry it's going to burn up quicker (i.e. less smoke) in a BGE or BWS. Do you soak the unflavorful wood? If it's a burn-up situation, try storing wood chunks in water (not for a long period of time, change water frequently) and see if the flavor comes back.
