They figured that out because forms of ammonia were already being used in baked goods, cheeses, chocolates, confections, puddings, condiments, relishes, soy proteins, snack foods, jams and jellies, non-alcoholic beverages, dairy products, fruits and vegetables, breakfast cereals, eggs, fish and beer that were being fed to humans.
