Great pasta salad starts with great pasta. We use Rustichella Fusille Col Buco. Break some up into about 2 1/2 inch pieces and cook it in boiling water salted with Flu de sol sea salt. Cook for about 20 minutes as this pasta takes longer then normal. When it's done turn off the heat and immediately pour in at least one cup of cold water to stop the cooking. Then drain and cool in a colander. Then chill the pasta in the refrigerator while you prepare the other ingredients. We use the following:
Red onion sliced thin and in about one inch pieces
Cut up pieces of ham, salami, red and yellow peppers, cucumber, black olives and sprinkle a little basil. Roast chicken and or cooked salmon works as well. Then season it with Wishbone Balsamic Italian Vinaigrette. Great stuff.
