Stuffing a pig

Have to cook a 100Lb pig this weekend. Have looked at several articles on stuufing or not to stuff. Would like to hear advice from the pros here on this board. Thinking of stuffing with chicken leg quarters, potatoes, onions, cabbage, garlic etc.. Was concerned with the chicken staying in the danger zone to long. Any thoughts and or suggestions will be very much appreciated.
