I just bought an Onyx with the same idea. My plan is to put one whole packer brisket on the bottom shelf, two butts on the next shelf, and 2 racks of ribs and chicken on the top shelf. if you trim the ribs to the heart of the rack, no more than 13 inches, you can get them to fit in front to back. That's the plan, anyway.
