A putting green lifts the meat and allows it to show better. I only worry about color at the edges as I try to fill the box. In some cases in KCBS I can barely see the edges of the garnish. It's just ther to lift the meat. The post by judge Judy is right on btw.
I usually cook FBA so I use what I learned there to make better KCBS boxes.
