Well, I can tell you this has not been the experience of many of the top teams in KCBS, judging by the number of Wagyu's I have seen in the last few years in their coolers. I am sure they would urge you and others to stay away from Wagyu, but only because it drives up their own brisket costs and makes competition harder.
I have a fabuous local supplier of prime dry aged briskets in Roseda Farms, but if not for them i would likely be using Wagyu myself.
