Garnish keeps the meat in the same position as it was when the box was made up. It also hides any sauce,juices, that that may show up when the box is carried from the cooks site to the judging table. Has the sliding of a meat sample caused a judge to score down?
I think that a cook team will get better scores with garnish and it levels the playing field for all cook teams.
