Every year it is a hot topic and one that judges are aware of and try to not let the garnish interfere with their appearance scores but it is a losing battle. Meat on a well garnished box just plain looks better than meat on a sloppy garnish job. The trend in my area is the putting green and if you have ever seen one done correctly it does enhance the apperance of the meat but if sloppy meat is put on a great garnish job it still gets marked down. All the garnish does is make the meat look more appetizing or less if the garnish is sloppy. Garnish is the one element you can control, you can't control taste and tenderness as much as you can control garnish. Don't give up points, sometimes the difference between first and second place will come down to a point or two lost because of the appearance score.
