Have a lot of red and white oaks on the place and use both. Mostly to get pit heated up and a good bed of coal going. Use hickory and some mesquite after that. When foiling any meat, once foiled I go back to burning the oaks. Saving the $$$$ wood. I have cooked straight through with the oaks, good Q and plenty of heat.
