Some good info but some myths.
Searing a steak does not seal in juices. Drying it does help to speed up the browning (Maillard reaction) which makes for a great tasting steak.
Piercing the meat with a fork has no negative effect.
Turning the steak more than once actually helps to cook it more evenly.
