if you read the safeserve books, they allow you six hours to get from 140 to 40. when i take my butts off the cooker they are at 195 or so. thus, you can't count the time from 195 to 140. if you left them on the cooker, i would assume they stayed above 140 until the fire was just about out. you would know that time.
finally, the safeserve only says that there is the Potential for spoiling, not that it happens in ever case. obviously, if left for an extended period of time, the possibility is greater. it sounds like you left the evening meal on the counter overnight instead of putting it in the fridge. seems like that happens a lot in every house in america.
