Don't forget the famous MBN "two pack" cut on the served ribs. MBN judges like to be able to pull two ribs apart for a tenderness check. Just part of the MBN mystique.
Have fun and think of your on site judges as very old friends who you prepared wonderful BBQ for and you want to tell them how you did it. Going from raw product to finished product.
