Just so you know, there are several types of stainless steel and I'm NOT an expert but some will rust because of iron content.

I have cast and stainless for my Louisiana 680, (neither are stock). I noticed the metals deliver heat differently. My cast grates seems to absorb and distribute the heat evenly where the stainless seems to slow the transfer.

The cast are great in the winter because they hold the heat so well. The stainless are great for not burning things like chicken breasts.
